Ingredients

Choose any winter squash you like such as butternut, acorn, carnival or a pumpkin.

Olive oil

Directions

Cut the squash in half lengthwise and remove the pulp and seeds  Also remove any stems before cooking  You may drizzle the squash with olive oil or add a few dabs of butter if you like or roast plain  Roast the squash, skin side down in a glass dish at 400 degrees for 40-50 minutes or until tender. Scoop the roasted squash out of the peel Season with salt and pepper, cinnamon and nutmeg or other spices of your choosing and Enjoy!
