6 large sweet potatoes
1 onion
1 stalk of celery
1 granny smith apple
6 cups of water or organic chicken broth
1.Bake the whole sweet potatoes in the oven and remove skin once cooled slightly.
2.Brown onion, celery and apple in bottom of soup pot
3.Add water/chicken broth and potatoes4.Cook 3-5 minutes until mixed
5.Transfer to blender and mix until smooth
6.Transfer back to the pot and add spices (salt, pepper, thyme)
7.Heat through and serve
I have frozen a portion of this before and it tastes even better when reheated later. You can definitely use less potatoes (3-4) and adjust water/broth accordingly. When using 6 potatoes, I normally have to add more water anyway.
