5 Minutes
none
2 just ripe Avocados
1/2 cup coconut sugar
1/2 cup raw cacao powder
1/2 tsp vanilla
pinch sea salt
1/2 cup water (or less)
Slice the avocado in half, and remove the pit. With a large spoon, separate the inside of the avocado from the skin. Put the avocado in a blender or food processor and add the coconut sugar, cacao powder and vanilla extract. Blend until creamy.
Add ½ cup water and blend again until smooth and creamy. If too thick, continue adding more of the water, a bit at a time. The consistency you are looking for is one of a pudding-like creaminess. When your consistency is perfect, pour into a bowl and chill for at least 30 minutes.
Serving suggestions: Slice up strawberries and bananas and serve them on top of the pudding, or skewer the bananas and strawberries and use the pudding as a fondue-like dip.
